This vegetarian tomato and egg curry is flavoured with ginger, garlic, chilli, cumin and coriander. It is an easy weeknight Indian meal that's ready in just over 30 minutes. Serve hot with naan bread.

  • 2 teaspoons ground coriander

  • 1 teaspoon red chilli powder, or more to taste
  • 4 tomatoes, chopped
  • 250ml water
  • 6 hard-boiled eggs, peeled, or more
  • salt to taste
  • freshly chopped coriander leaves to serve (optional)

  1. Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds; cook and stir until browned, about 1 minute. Add onion; cook and stir until golden, about 6 minutes. Stir in coriander, ginger-garlic paste and chilli powder; cook until fragrant, about 1 minute.
  2. Stir tomatoes into the pan. Cover and cook until softened, 5 to 10 minutes. Pour in water; bring to the boil. Add eggs; cook until flavours combine, about 2 minutes. Season curry with salt and remove from heat. Garnish with freshly chopped coriander leaves if desired.

  • 1 red onion, diced
  • 2 cups diced tomatoes

  • 1 clove garlic
  • 1 teaspoon grated fresh ginger

  • ¼ bunch fresh cilantro, chopped (Optional)

Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds cook and stir until the seeds begin to sputter, about 5 minutes.

Add onion to the pan cook and stir until the onion turns golden, about 5 minutes.

Stir tomatoes, red chile peppers, garlic, ginger, chili powder, salt, ground coriander, and cumin into the onion mixture. Cook and stir until the tomato begins to break down, 5 to 7 minutes.

Stir eggs into the curry reduce heat to low and simmer until flavors are mixed, about 5 minutes. Garnish with cilantro.

Spicy Egg Curry – a popular Indian curry which is best enjoyed with plain rice or Indian breads like paratha and roti.

Eggs are something that I do not cook very often in my kitchen, yet I always have a large box of it in my refrigerator. That’s because I use eggs all the time in baking so obviously I need a keep a big stock of it at home all the time. Also, sometimes we eat boiled eggs but that’s mostly it. Other than that, I hardly cook with eggs. Hubby isn’t a fan and even though I like it, I don’t like the idea of cooking an elaborate meal and then eating it all by myself! Egg curry is one thing which I have always liked. I remember in my house, mom would make egg curry when we ran out of vegetables. She usually added potatoes along with the eggs in the curry. In my egg curry, I skipped the potatoes and added green peas.

I have been meaning to make this egg curry for so long and finally got around making it last month. Egg curry is quite popular in India and is made in several ways in different parts of the country. Some versions are very spicy! The recipe that I am sharing today is more or less of the egg curry that I grew up eating. Of course I have made few changes here and there and tweaked it to my taste, but mostly this is how it’s made in northern parts of India. For the curry base, I have used both onion and tomatoes, you may use tomatoes only. It will still be as delicious!

Making egg curry is not really difficult. In fact if you have the eggs boiled and ready to go then it’s just a matter of putting everything together. Like I say always, the secret to a good curry/Indian recipe is always “patience”. Yes the masala needs time to cook. If you don’t give it enough time, it will never turn out that delicious. Cooking the onion, tomatoes and spices on low heat for a extended period of time really enhances the flavor. And so in this egg curry, I cook the tomatoes for 5-6 minutes, add spices and cook again for 6-7 minutes. And that’s how you get a delicious curry!

This egg curry is great for those days when you don’t have any veggies in your refrigerator but still want to cook a delicious meal. It’s really comforting especially as the weather starts to get cooler. Hope you guys enjoy it!

Heat oil in a pan on medium heat. Once oil is hot, add cloves and peppercorn. Saute for few seconds till fragrant and then add cumin seeds and mustard seeds. Wait till cumin seeds sizzle and mustard seeds start popping out.

Add chopped onions now and cook for 2-3 minutes or till they start turning light brown in color.

Add garlic, ginger and green chili and mix.

Cook for another 2 minutes or till raw smell of ginger and garlic goes away.

Add pureed tomatoes and mix. Cover the pan and cook for 5 minutes on medium heat.

Open the pan and add salt, coriander powder, turmeric powder, garam masala powder and kashmiri red chili powder. Cover the pan again and cook for another 6-7 minutes.

Once the tomatoes and spices are nicely cooked, add 1 cup of water to the pan. Add less water for a thicker consistency or more for thinner.

Add boiled eggs, green peas [I used frozen] and mix. Simmer the curry for 5-6 minutes on medium-low heat.

Add chopped cilantro, cover the pan and simmer for another 2 minutes.

Serve egg curry with any bread of your choice. It also tastes great with rice.

* Using green peas is optional. You may skip it. You may add potatoes to the curry is you like.

* Adjust spice levels to taste. You may add red chili powder for a spicier curry. The kashmiri red chili powder is used mostly for color.

Egg Curry

Indians like to make a curry with almost everything and eggs are no exception! While eggs are mostly eaten for breakfast world over, this is not necessarily the case with Indian cuisine. Egg bhurji for instance, a popular scrambled egg dish made with onions, tomatoes and spices, is served as an appetizer. It is also served with naan, roti or other Indian bread.

My friend, who is from the northern part of India, taught me this recipe years ago. I make incisions to boiled eggs, dry them and then saute till they get slightly crisp outside. Tomatoes bring in the tangy taste and onions add a natural, mild sweetness. The spices-ginger/garlic, turmeric, chili powder, garam masala and coriander powder add a nice spicy flavor that comes together in this delicious recipe. I love to eat egg curry with hot rotis, Brown Jeera Rice, or Jeera Quinoa.

Eggs are regarded a ‘complete’ source of protein as they contain all eight essential amino acids the ones we cannot synthesize in our bodies and must obtain from our diet. Don’t discard the yolk! And truly pasture-raised eggs are way better than the ones that you’d find in the grocery store. So, find a farmer’s market or a coop near you for farm fresh eggs!

50th post with Madhur Jaffrey’s Egg Curry and A (no Two) Giveaways!

I know its Wednesday and its supposed to be Wordless, but trust me you won’t mind me talking today! I had to jump in and give the series Wordless Wednesday a tiny pause because I was happy today. Happy because this is my 50th post! When I started this blog it was like my recipe journal where I wanted to collect all my recipes because I was missing pages from my old recipe-book a little too often. Fifty posts ago I had no idea that it would bring so much along with it. Not only was I able to save my favorite recipes at one place but it also introduced me to a whole new world out there – I got to know so many gorgeous people who I can now call friends. It’s a great feeling and if I have never said this before then today I just want you to know how much I cherish each and every one of you. Thank You for being here to support me and cheer me up!

I was am not a very good cook and I am a new mom so I don’t even have a lot of time to cook but I and my family are BIG foodies. I always hunt for recipes that are simple, with minimum ingredients and are quick to make so that I can put dinner on the table while juggling with my crazy day-to-day life. I guess that’s what most of my friends/readers try to do. So when I decided to do something for them, I thought I would help them find some interesting ideas from my recipe-book which they could try. Since Indian food is something I’m most comfortable with, I thought how about I share a simplified version of Indian food and make it approachable to those who love the cuisine but don’t have a lot of time. Like this recipe, which I can’t call mine but you’ll soon know why I’m sharing it with you today. The recipe is for hard boiled egg curry and it is from Madhur Jaffrey’s Quick and Easy Indian Cooking.

I love this recipe because it falls right in my comfort zone. It’s quick and easy and tastes delicious! And this book is full of such recipes. Traditional Indian recipes which otherwise people dread trying because they look so complex are a breeze with this book. Madhur Jaffrey has done an awesome job with this book by making the recipes look simple and not adding a zillion ingredients in them. If you like Indian food even a little then you would find these ingredients in your pantry any time. I love this book and I love you! So I thought if I could share this book with you, it would be great. But since I can’t give it to all of you, I would love to randomly pick any one reader who I can send a copy to.

And now one of my favorite recipes from the book. The recipe for Masaledar Ublay Undayor Hard Boiled Egg Curry.

Ingredients: (from Madhur Jaffrey’s Cookbook)

1/2 tsp cayenne pepper
1/2 tsp ground turmeric
1 tsp ground cumin
1tsp ground coriander
1tsp fresh lemon juice
3/4 tsp salt
Freshly ground black pepper
2 tbsp vegetable oil
1/2 tsp cumin seeds
5 tbsp (2 1/2 oz) onion, peeled and finely chopped
1/2 inch piece fresh ginger, peeled and finely chopped
1 cup canned tomatoes (or lightly drained, canned whole tomatoes, finely chopped)
1/4 tsp sugar
3-4 tbsp chopped fresh cilantro (Chinese parsley, fresh green coriander)
4 hard boiled eggs, peeled and cut into halves lenghtwise.

Combine the cayenne, turmeric, ground cumin, ground coriander, lemon juice, salt, black pepper, and 1 tablespoon water in a small bowl. Mix.
Put the oil in a medium-sized, non stick frying pan and set over medium heat.
When oil is hot, put in the cumin seeds. Ten seconds later, put in the onion and ginger. Put in the spice paste.
Stir and cook for 15 seconds. Now put in the tomatoes and sugar. Bring to simmer.
Cover and simmer gently for 10 minutes. Put in the cilantro.
Stir once or twice. Lay the cut eggs in the sauce and spoon more sauce over them.
Cover and gently simmer for 2-3 minutes. And then serve with rice or even bread (toasted or plain).

She was making it in her kitchen from as far as she could remember. As I began to run out of it, I started getting frequent shipments of garam masala all the way from India from her. But it was not long before my worst fears came true! Early last year, a combination of events left me without a stock forcing me to the grocery store. Then came a spell of several months when I was trying every brand of curry powder on the shelves. But neither of them came close. Again – MIL to the rescue! She shared her much cherished recipe for home-ground garam masala and after several shots at it (ok may be more than that), I think I perfected it. So for my 50th post, I also want to share with you this integral part of my kitchen in the form of a 5 oz bottle of my homemade Garam Masalapowder.

I use the same masala in all my curries like this egg curry recipe where just a teaspoon of this masala makes up for several ingredients. Even in little quantities, this masala brings with it some of the freshest aromas and that’s probably why it lasts me a lot longer too.

Now there is something I have to add for those picking Option B (here comes the fine print!). While this home made Garam Masala does not contain egg, peanuts, tree nuts, fish, wheat or dairy products, it has been prepared in a kitchen where these products are used. It’s primary ingredients include cloves,cinnamon, cumin, black pepper, black cardamom, and bay leaves. It has been prepared using my own recipe. Please do not choose Option B if you are allergic to any of these ingredients.


Ingredients of Spicy Egg Curry

  • 2 boiled egg
  • 1 onion
  • 2 tablespoon melon seeds
  • 1 1/2 tablespoon red chilli powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon kasoori methi powder
  • 2 tablespoon fresh cream
  • 1 chopped tomato
  • 3 green chilli
  • 1 tablespoon cashew nut paste
  • 1/2 teaspoon sugar
  • 1/2 teaspoon garam masala powder
  • 5 cashews
  • salt as required
  • 1 handful chopped coriander leaves

How to make Spicy Egg Curry

Step 1 Boil the eggs

To prepare this mouth-watering Spicy Egg Curry, boil eggs in a pan. Once done, keep aside without peeling them.

Step 2 Saute onion & tomato

Now, grind 1/3 of tomato, 1 tbsp melon seeds and cashew paste. Transfer this paste in a bowl and grind 1/3 onion with melon seeds. Transfer this paste in a bowl. Now, put a pan over medium flame and add oil in it. When the oil is hot enough, add 1 tbsp onion, 1 tbsp tomato, 3 slit green chillies. Saute for 2 minutes.

Step 3 Prepare the gravy and add eggs in it

Next, add the onion-melon seeds paste and tomato-cashew and melon seeds paste in it. Cook for 2 minutes and then add red chilli powder, salt, sugar, cumin powder, garam masala, kasoori methi powder, chopped cashews and coriander leaves. Simmer for 2-3 minutes and then add fresh cream. Cook for 1 minute and meanwhile peel and halve the eggs. Add in the gravy and cook for 2 minutes. Garnish with coriander leaves and serve hot.

In case you don’t have an instant pot, please boil your eggs the traditional way on a stove-top in a pot.

  1. Place eggs in a single layer in a sauce pan. Very gently pour water to ensure there is about 1 inch water above the eggs. Place the pan of medium heat and bring to boil.
  2. Once you see steady boil, remove the pan from heat and cover it with a lid. Let the eggs cook gently in the hot water. This will produce tender eggs that are not rubbery and no cracks on them.
  3. Let the eggs sit for 8-10 minutes in hot water(if you have large eggs them allow them to cook in hot water for about 12 to 15 minutes depending on the size of the eggs).
  4. Remove eggs from hot water, immerse them in ice cold bath immediately. Wait for a minute. Then peel the shells easily and you perfect hard-boiled eggs are ready! Eat them immediately or refrigerate it for later use or make egg curry Indian style.
  5. Once you have hard boiled eggs ready, egg curry recipe is real simple and easy to make.


Northern Indian Egg Curry Recipe (Anda Masala)

I love eggs in all manner. When I was young, my dad would soft boil eggs and we’d eat them together in egg cups. He showed me how to tap the top with the back of a spoon and peel back some of the shell to reveal the soft, jiggly insides. Then we’d sprinkle in some salt and pepper and eat them up. Those were fun times, the days before people watched their cholesterol levels and eggs became ‘bad’ food.

Recently, eggs have made sort of a comeback. There’s a crisp fried egg atop all kinds of foods. Poached egg tutorials are popular, as is the soft-centered eggs enjoyed with Ramen (boil them for 6.5 minute only!). The French omelet is something I mastered for an egg-cellent banh mi sandwich. A couple weeks ago, a book called All About Eggs released and is selling well.  

This time of year, even though I don’t have kids to dye eggs with, I boil eggs. Easter is a great excuse to eat boiled eggs in all kinds of dishes. Aside from deviled eggs and egg salad sandwiches, and also the Vietnamese pork and eggs simmered in coconut juice, I also think of this Indian dish -– anda masala. It’s easy and comes together quickly, especially if you have boiled eggs sitting in the fridge (hint: what to do with leftover Easter eggs!). It's also just delicious.

My version below was initially inspired by Julie Sahni’s Classic Indian Cooking, which was published in 1980 and still referenced and used by tons of people today. In that book, the dish is called ande ki kari. She added fresh ginger along with the garlic, which you can too (try 1 tablespoon of finely chopped, peeled ginger).  

If you’re and egg lover and/or new to Indian cooking, this a winner of a recipe to try. Anda masala involves classic Indian approaches to layering flavors, such as frying up cumin seeds to release their potency – a process called tadka. Cooking down the onion until it starts to caramelize builds earthy flavor. You’ll also blend your own spices, which I always fun. You can use regular ground coriander or if it’s available, look for the football-shaped coriander seeds used in Indian kitchens. It’s sweeter than the spherical coriander seeds, which are more citrusy than sweet.

Along with a green salad, this was our Easter lunch, along with chapatti flatbread. You could use wheat tortillas, naan or Basmati rice. Instead of fresh tomato, use 1 1/2 cups of canned crushed tomato or tomato puree. I had frozen tomato from last summer for this dish.

Northern Indian Egg Curry 

Anda Masala

Serves: 2 as a main dish, 4 as a side dish


Ingredients

  • 4 or 5 large or extra-large eggs, boiled for 8 to 10 minutes (less for slightly underdone eggs)
  • 1 tablespoon vegetable oil
  • 1 rounded teaspoon cumin seed
  • 1 medium yellow onion, finely chopped (1 cup)
  • 3-inch cinnamon stick, broken in half
  • 2 rounded teaspoons ground coriander or coriander seed, toasted and pounded
  • 1/2 plus 1/8 teaspoon dried red pepper flakes
  • 1/2 plus 1/8 teaspoon ground turmeric
  • 2 large cloves garlic, thinly sliced
  • About 1/2 teaspoon salt
  • 2 large ripe tomatoes, grated (about 1 1/2 cups)
  • 3/4 cup water
  • 1 tablespoon coarsely chopped cilantro leaves

1. Peel the eggs and let them soak in water to cover while you prepare the sauce. This soaking seems to prevent the whites from getting too rubbery. Set aside.

2. In a medium skillet or wide, shallow pan, heat the oil over medium-high heat. Add the cumin seed and cook, stirring, for about 15 seconds, until slightly darkened and fragrant. Add the onion and cinnamon. Cook, stirring frequently, for 5 to 6 minutes, until the onion has taken on a bit of brown.

3. Add the coriander, red pepper flakes, turmeric, garlic, and salt. Continue cooking for about 2 minutes, until the garlic has lightly fried and aromatic. Lower the heat as needed to coax the cooking. Add the tomato and cooking for about 5 minutes, stirring, until it no longer smells raw and slightly thickened. Add the water, bring to a boil. Lower the heat to low, cover with a slight vent, and gently simmer for 5 minutes to develop the flavor.

4. Meanwhile, drain the eggs, pat them dry, then halved each lengthwise. When the sauce has finished simmering, uncover and slide the eggs in, cut side up. Increase the heat to medium-low and simmer the eggs, spooning a little sauce on the top, until the eggs are hot. Adjust the heat as necessary. The sauce should cook down and thicken a bit during this final stage.

5. Transfer the eggs and sauce to individual serving dishes or a communal dish. Garnish with the cilantro and serve immediately.
