First we wash the acacia flowers well and leave them to dry on a kitchen towel.
In the meantime, we're preparing the starch.
Beat the eggs well (for speed, I use a mixer) and mix them with the milk. Optionally add vanilla sugar and grated lemon peel. I do not put because I want to feel the refined taste of acacia flowers!
Then add the salt and gradually the flour and mix until you get a creamy consistency.
Add the acacia flowers (petals only), a little oil and mix lightly with a wooden spoon. We also add baking soda, which will make them much fluffier! After mixing, let the starch rest for about 5 minutes.
Heat a non-stick pan over medium heat. Drain a little oil, lightly grease it and pour the desired amount of the composition of pancakes (scrob), with a polish. We spread the starch, evenly in the pan.
Let it bake for about a minute, a minute and a half and then turn it, carefully, on the other side. When it's ready, we take it out on a plate.
Do the same with the rest of the starch, until we finish making all the pancakes.
We serve them warm, with jam, jam or syrup, as preferred, with a cup of milk! I prefer them without, possibly with a cup of milk, just to feel the taste of acacia flowers.
Pancakes filled with cheese are very easy to prepare.

- 250 ml milk
- 100 g of flour
- 2 tablespoons butter, melted
- ½ teaspoon salt
- butter or oil.
Ingredients for the filling
- 450 g of cheese, crushed
- 2 eggs
- 50 g sugar
- 2 teaspoons vanilla essence

In a bowl, mix the eggs with the milk, melted butter, flour and salt. Grease a pan with a little butter or oil.
Pour a few tablespoons of dough until it covers the entire surface of the pan. Brown the pancakes on both sides until golden. Take them out on baking paper.
Mix the cheese with the eggs, sugar, vanilla essence and salt. Grease each pancake with 2 tablespoons of this mixture, then roll them carefully.
Roast them for another 1-2 minutes on each side in the pan. Serve hot.
Prepare the cake top first. Separate the egg whites from the yolks, but be sure to put the egg whites in a clean, well-degreased bowl.
Mix the yolks with the sugar, until you get a creamy composition, add the oil in a thin thread, then pour the flour, cocoa and baking powder, sifted and mixed.
Stir in the dough until smooth. Separately, beat the egg whites, then pour the meringue over the previous composition, stirring from the bottom up, so that the top remains airy. Incorporates acacia flowers, torn from the bunches.
Put the cake top in the oven, in a tray lined with baking paper and leave it for 30 minutes, at 175 degrees.
Let the countertop cool, then cut it in three. Syrup the cake slices with honey syrup, then fill the cake with whipped cream. Cover the cake with whipped cream.

RECIPE OF THE DAY: Pancakes with acacia flowers
A dessert with spring flavor that brings with it the benefits of acacia flowers.
You need: 3 large eggs 500 ml milk 2 tablespoons brown sugar 200-250 g white flour, or whole 2 tablespoons sunflower oil a pinch of freshly picked acacia flowers (as many as you want).
In a bowl, beat eggs with sugar and a pinch of salt. Add the sifted flour little by little and mix with the whisk, taking care not to form lumps.
When the composition thickens, start adding little by little milk and oil, until you add the whole amount. You can adjust the thickness of the dough depending on how thin you want the pancakes to be. If you want to get thinner pancakes you must have a more fluid composition. You can not add all the milk or add a little more mineral water. For thicker pancakes, the composition must be denser. You must also keep in mind that if the composition is left to rest, it will thicken.
Add the washed and drained acacia flowers and mix the composition well. Leave the composition to rest for 30 minutes in the refrigerator.
Put the pan on the fire and let it heat up. Grease the pan with oil using a brush. Pour the pancake batter into the well-heated pan with the polish or a cup. When the pancake turns golden on the edges, loses its luster and becomes opaque. Turn the pancakes over using a spatula. Bake the pancake until it turns brown.
They can be served simple, because acacia flowers also give jam and flavor, or you can serve them with acacia jam or a little acacia honey, if you want them sweeter.
