Step 1: prepare the dough.
You can use whole almonds by slicing it, or take almond petals. It will be tasty anyway.
Dice cold butter.
Pound the butter and flour and corn starch into crumbs. The dough should not be uniform. Add almonds, yolks, lemon zest, sugar and salt. Stir with your fingers while rubbing the ingredients together.
Step 2: bake the almond crumble.
Transfer the resulting dough into a baking dish, covered with parchment for baking. Carefully level the top, but do not tamp. The height of the pie should be about the finger so that the dough is baked.
Bake in preheated 170 degrees oven for 30 minutes.
