Lean soup with black beans and tofu


  1. black bean 2 cans
  2. onions 1 pc.
  3. garlic 2 cloves
  4. ground caraway seeds 2 tsp
  5. vegetable broth 500 ml
  6. blue onion 1 pc.
  7. tofu 250 gr
  8. olive oil to taste
  9. lemon juice 1 tbsp
  10. cilantro leaves to taste
  11. pepper to taste
  12. salt to taste

Fry onions until soft. Add caraway seeds and squeeze the garlic. Stir and fry for 15-20 seconds. Add 1 can of black beans and vegetable broth. Salt, pepper. Mash with a blender.
Add a second can of beans. Bring to a boil and turn off the heat.
Cut the tofu into large cubes, put in a blender bowl. Add olive oil and lemon juice. Beat with a blender. Finely chop the blue onion. Add tofu paste, chopped blue onion and cilantro leaves to the bowl with the soup.
