Introducing the Dish on Fish E-Cookbook: “Everyday Seafood Recipes”

Drumroll please…introducing our e-cookbook: “Everyday Seafood Recipes: 53 Quick and Easy Dishes” We launched the Dish on Fish blog a few years ago because we wanted to show you how easy it is to create healthy and delicious seafood dishes in your own kitchen. Since then we’ve created more than 50 recipes featuring seafood for breakfast, lunch, snacks and dinners. We eat with our eyes first, so every recipe includes a mouth-watering image or fun video. Many of the recipes include pantry staples—and all are pesca­tarian-friendly (Go Pescatarian!).

We are big fans of keeping frozen, canned and pouched seafood on hand—because it makes it so easy to include seafood in your meal plan at least 2-3 servings a week as recommended in the Dietary Guidelines for Americans.

If you are trying our pescatarian challenge, the e-cookbook provides plenty of variety. You’ll find high-protein breakfast options, like our Egg and Crab Muffins and Salmon-Stuffed Avocado Boats. Looking to satisfy your mid-day cravings? Enjoy our Tuna Croquettes, Smoked Trout Dip or Seared Scallop Salad for a lunch or snack. For dinner, we suggest a hand-held like the Grilled Mediterranean Salmon Gyros or try the Tilapia Piccata or Wild Alaska Pollock en Papillote.

There are also call-out tags throughout the cookbook for gluten-free recipes, kid-friendly favorites and our cook-along series, “The Seafood Supper Club.”

These recipes are like our children—we can’t pick favorites—however we want to share a few today to help kick off National Pescatarian Month. Hope you will enjoy this easy-to-use cookbook and share it with a friend.

Full of healthy tuna and loaded with flavor, these patties are great for a snack, light meal or even a party. Grilled Mediterranean Cedar Plank Salmon Gyros

This Greek-inspired grilled salmon gyro provides the perfect combination of fresh vegetables, salty olives and zesty tzatziki. We love salmon in a gyro because it ups the nutrient notch of this traditional Mediterranean handheld. This superfood is rich in protein and omega-3 fatty acids, which help to reduce inflammation, lower triglycerides and support heart and brain health. Lemon Tilapia Piccata

Wild Alaska Pollock en Papillote with Chimichurri Sauce

Grab the aluminum foil for these en papillote fillets! En papillote is French for “cooking in a pouch,” which equals a no-mess, high-flavor meal! We used flaky, tender Wild Alaska Pollock paired with a vibrant chimichurri that will kick dinner into high gear.

Introducing the Chissada! (Chili-Casserole-Enchilada)

700 square feet isn’t a lot of space for: stocking up for months’ supply of toilet paper, loading up the freezer with meats and the pantry with cans of nonperishables and bags of rice, or dance parties featuring more than two people and a dog however, it doesn’t mean you need to compromise on a healthy and hearty meal.


  • 1 8.5 oz package of cauliflower rice – cook accordingly
  • 2 cups of roasted chicken meat, chopped (or you can use cooked ground beef/turkey or, make it vegetarian and omit this step!)
  • 1 can of black beans, drained and dried (or for a lower-carb option, omit this step!)
  • 1 can of enchilada sauce (or 6-9 oz of any “sauce” you’d like)
  • 2 cups of shredded cheese (or try it with feta or any crumbly cheese for some different flavors!)
  • Your choice of seasonings


  1. Preheat oven to 400 degrees.
  2. Toss cooked cauliflower rice, chicken/meat, beans, sauce, seasonings and any other fun pantry items (we added a can of green chilis and drained jalapenos because we like it spicy) into a 9࡯ baking dish (or any size, really…this is all we have). Top with 1 cup of cheese evenly spread out.
  3. Bake for 15-20 mins.
  4. Take out, stir it up, top with more cheese and anything else you want (we added chopped tomatoes, cilantro, avocado, and green onions). Bake for another 5 mins or so.
  5. Here’s the fun and versatile part. Now you can:
      • crumble some tortilla chips on top
      • dollop on some sour cream
      • eat as a dip with crackers
      • fold up into tortilla for a burrito

      If you want this to be more of a chili, add in a can of tomatoes and a 16 oz box of bone broth (or any stock) to the first step, and omit the cheese until the end. Cook on the stovetop for about 20 mins.

      Introducing 'Week of Meals': Our new series aimed at bringing you easy recipes for busy weeknights

      People are getting tired of cooking. I understand that feeling intimately, especially as someone whose job it is to cook and come up with new recipes to inspire you, the reader. Whether for work or pleasure, I’m never not chopping or boiling something. The endless meal planning, organizing and, worst of all, dishwashing really takes a toll. All this to say, I get you.

      One year into cooking more meals at home than ever before, the fatigue has set in for even the most cooking-obsessed among us. So to ease the frustration of having to cook for yourself or your household every day, I’m introducing a series called “Week of Meals,” which will give you five weeknight dinner recipes with all the planning and strategizing built in.

      Each meal will make four servings, come together — start to finish — in less than 60 minutes, and require 10 or fewer ingredients. The groceries for all five meals can be bought from a single grocery store and in a single shopping trip (remember, we’re looking to alleviate your frustration) and will cost less than $100 total.

      Of course, there are some caveats: Spices, condiments and other basic pantry staples I expect you to have will be priced by the amount used in the recipes and, whenever possible, I will give substitutions for them in the recipe’s headnote. But also know that if I call for certain spices, they will be used at least twice throughout the week so you can get used to incorporating them in different ways and with different ingredients.

      Staples like salt and pepper, cooking oil and water will not be included in the shopping list nor will they be counted in the 10 ingredients for each recipe (because, well, if you don’t have these things, maybe takeout really is the best option). For oil, however, I will provide the total amount needed for all five recipes so you can check whether you have enough before shopping.

      Any ingredients that need to be prepped ahead of time will be listed in the “Sunday Prep” section, so that once it’s time to cook, some of the hard work will already be done. And all meat, produce, herbs or other fresh/perishable ingredients will be fully used up by the end of the week so there will be no half-used, sadly wilting herb bundles to toss out on Friday.

      We will publish the grocery list in full, along with the specific grocery store where the author has shopped so that, should you choose, you can go to that location or the same chain. Specialty chains and gourmet grocery stores will be off-limits.

      Whether you follow the plan in full or simply make one recipe, my hope is that you will enjoy delicious, simple and balanced weeknight meals without any of the mental or physical anguish that goes along with planning and prep. Sometimes I will develop the recipes for a “Week of Meals,” but much of the time they will be developed by other cooks and authors in California with the goal to have them — by going to their own neighborhood grocery stores — show you how different cooks get dinner on the table throughout the week.

      Should I stay or Should I go?

      The other question I get asked a lot is “Should I give the speaker introduction and then leave the stage or should I give the introduction and then wait for the speaker to get to the lectern / centre stage and then leave?

      My feeling on this is you should wait at the lectern and there are a number of reasons for this.

      I like to control the audience focus!

      If I walk off before the speaker comes on, the audience don’t know where to look.

      I like to give the Speaker Introduction and gesture towards where they are coming from. Once they are onstage and moving to the centre, everyone will be looking at them. I then move slightly to the side but wait for them. Once they nearly get to the speaking position I extend my hand in welcome, shake hands and then leave the stage.
