My family loves cream soup, I for the taste and texture, my children because they don't have to strain the vegetables in the spoon, so thank you all.

  • 1 suitable zucchini
  • 2 large white onions
  • 3 carrots
  • 3 bell peppers
  • 5 potatoes for the mother
  • 50 gr. oil
  • green parsley
  • dried basil
  • salt pepper
  • sour cream (optional)

Preparation time: less than 60 minutes

RECIPE PREPARATION Cream vegetable soup:

In a soup pot we put the cleaned and washed and quite large vegetables. Cover with enough water and let it boil for about 40-50 minutes. When they are ready to cook, we take the vegetables out in a bowl and with a blender we pass them until a fine puree results.

Separately heat the oil or preferably butter, add the vegetable puree and thin with the vegetable juice, which I put aside, did not throw it away and mix thoroughly with a whisk. Season with salt, add pepper (I like ground white pepper in this soup) and chopped basil.

According to preference, we serve it either with sour cream or only with chopped green parsley.
