First of all, prepare the noodles: From all the ingredients, form a hard dough, then let it rest for 30 minutes (to set the gluten). The dough is cut with a knife into 4 pieces, which are easily flattened and passed one by one through the rolling rolls (from the thickest setting to the thinnest, until we reach the desired thickness). I expect you to ask me if salmon could be replaced with another fish. I would say yes, just be careful to choose a boneless fish. Carp, for example, is delicious, it would give a wonderful taste to this soup, but its flesh is full of small bones. Even carp fillets have a lot of bones that are difficult to remove before cooking.

Salmon soup with vegetables is served with crispy bread croutons. You can make the croutons in the oven, if you make a larger or faster amount, in the pan, if you make less. Croutons can be flavored with paprika, dried basil, cumin seeds, etc.

Method of preparation

Peel the carrots, onions and potatoes, wash and cut into cubes.

Put a little oil in a saucepan and first fry the onion and carrot, over low heat, for 4 minutes.

Meanwhile, wash the mushrooms and cut into slices. Add to the pan and cook for another 5 minutes. Put the potatoes and leave for 2 minutes, then the finely chopped spinach and crushed garlic.

Mix with a wooden spoon and pour the water. Let the soup boil for 20 minutes on medium heat.

Towards the end, add the cream or coconut milk and season with salt and pepper to taste. You can also add greens, such as parsley, dill or basil.

After boiling, turn off the heat and let the soup infuse for a few minutes, to harmonize the flavors.

Vegetable soup with mushrooms and cream is served hot with bread or polenta.

It is nutritious, filling and delicious. It is worth trying, and the recipe is shared with your loved ones.

Some people add vinegar to this soup to make it look like "Radauti" soup.

How to make Turkish homemade Tarhana

Tarhana is a traditional Turkish soup, spiced throughout Anatolia. It is also the name of the dry pulse made from a fermented mixture of plain yogurt, flour and vegetables that are used as a base for soup.

Tarhana is a base in many parts of Turkey. Tarhana soup is prepared by mixing the desired amount of crushed tarhana with boiling water, milk, butter and spices and cooking over a low flame.

Tarhana powder is prepared by mixing plain yogurt, flour and grated vegetables, such as red pepper, tomatoes and onions, in a thick paste that is left to ferment for a few days. The paste is then divided, dried and crushed to make tarhana powder.

You can buy tarhana powder in most Turkish drinks and in the markets of the Middle East. Many chefs, especially those in rural areas, prefer to make their own tarhana. This is usually done once a year during the summer, when pulse drying is easy.

ioana, was the mustard you used grains or table mustard? that I like what it looks like, I bought a cauliflower, maybe - maybe I'll get it too

I put table mustard, but if you have dust you can put it like that, the aroma will be stronger, or grind a few grains, about half a teaspoon.

I also have a problem.
With all these names of curry (like 3 different kinds). You are referring to curry powder made from curry leaves. or the curry mixture of spices that is commercially available?

It `s very good. I did it with emotions because my friend doesn't eat either pumpkin or cauliflower, but he told me several times that it is very good.

I would frame the recipe as "cheap recipes". Without spices and oil, I spent 11 lei and I have eaten 6 servings so far. And we still have.

Delicious soup Ioana, as well as all your recipes, which are very helpful and in which I trust, and the combination of cauliflower and curry goes very well, in fact all the vegetables in it go very well with curry. I put another liter of water, otherwise the stew would have come out. Does it come out like a soup of 1l of soup and 200 ml of water or did I misunderstand?

it's a pretty thick soup, you can see it in the pictures. but it's a bit old recipe, I should revise it a bit to see if any changes / adjustments are needed.
