Dough: Prepare the mayonnaise from 75 ml of milk, 1 lgt. sugar and 1 lg flour. Mix everything in warm milk and leave to rise for about 15 minutes. In a bowl sift the flour, add the sugar, salt powder, beaten eggs, chopped butter, orange peel, mayonnaise and the rest of the milk. Knead a suitable and non-sticky dough. If necessary, add as much flour as necessary. Leave the dough to rise for an hour.
Cream: In a saucepan mix the yolks together with the sugar, vanilla sugar and flour. Thin with cold milk then put on low heat until it begins to thicken, stirring constantly so as not to stick to the bottom. When the consistency of a pudding is obtained, remove from the heat and add the raisins while it is still hot. Leave to cool, during which time we mix to cool evenly and without lumps.
Spread the dough in a thin sheet of half a centimeter, in a rectangular shape. Grease the sheet with cream, grate the peel on top of an orange and then roll the sheet carefully. Cut pieces of 1-2 cm with a very sharp knife and place the raised slices in a round tray lined with baking paper.
Bake at 225 degrees for 25-30 minutes. until nicely browned on top. They are good both hot and cold, sprinkled on top with vanilla powdered sugar.
